The food industry is a sector affected by technological developments and
environmental factors in the world. Additionally, people's changing eating
habits also affect this sector. Innovations in production processes, changes in
agricultural products and awareness of healthy nutrition direct food
manufacturers to work on new product development. In this way, while
producing in line with consumer preferences, an economic advantage can
also be achieved. In line with what has been explained, it is thought that it is
important to disseminate advantageous new production techniques, new raw
materials or preservation techniques. For these reasons, this book provides
information about some new processes and materials that can be applied in
the food industry. Hoping that our study will be beneficial for the food
