Depremler, turizm destinasyonlarının çekiciliğini ve hizmet sunum kapasitesini ciddi şekilde etkileyen doğal afetlerdir. 6 Şubat 2023 tarihinde yaşanan depremler, Hatay’ın kültürel mirasıyla bütünleşen gastronomi turizmini de derinden sarsmıştır. Bu çalışma, depremin ardından Hatay’daki gastronomi sektöründe yaşanan sorunları belirlemek ve çözüm önerileri sunmak amacıyla gerçekleştirilmiştir. Araştırmada, Hatay ilindeki restoran sahipleri ve yöneticileriyle yarı yapılandırılmış görüşmeler yapılmış, elde edilen veriler içerik analizi yöntemiyle değerlendirilmiştir. Çalışmaya 12 katılımcı dâhil edilmiştir. Bulgular, işletme kayıpları, müşteri ve turizm hareketliliğinde azalma, tedarik zinciri problemleri, altyapı eksiklikleri ve hizmet kalitesinde düşüş gibi çok boyutlu etkilerin yaşandığını göstermektedir. Ayrıca, yerel gastronomi kültürünün korunmasına yönelik çeşitli ihtiyaçlar tespit edilerek bulgular ışığında öneriler geliştirilmiştir. Sonuç olarak, Hatay gastronomisinin yeniden canlanabilmesi için altyapı iyileştirmeleri, finansal destekler, tanıtım kampanyaları ve sektörel eğitim çalışmalarının eşgüdüm içinde yürütülmesi ortaya konmuştur.
Earthquakes significantly affect the attractiveness and service capacity of tourism destinations. The earthquakes on February 6, 2023, also deeply affected the gastronomy tourism in Hatay, which is closely intertwined with its cultural heritage. This study aims to identify the problems experienced in Hatay’s gastronomy sector following the earthquake and to propose potential solutions. Semi-structured interviews were conducted with restaurant owners and managers in Hatay, and the collected data were analyzed using content analysis. The study includes 12 participants. The findings reveal that the sector faced multidimensional challenges, including business losses, declines in customer and tourism flows, supply chain disruptions, infrastructure deficiencies, and a deterioration in service quality. In addition, various needs for the preservation of local gastronomic culture were identified and recommendations were developed considering the findings. As a result, it is concluded that the revitalization of Hatay's gastronomy sector requires coordinated efforts involving infrastructure improvements, financial support, promotional campaigns, and sectoral training initiatives.
