Özet
The “mesir Macun ” or mesir paste is a natural product obtained by mixing 41 different aromatic plants and spices. The paste has potential effects on human health, especially in stimulating appetite, relieving flatulence, curing some diseases and regulating blood circulation. It is a natural mixture that is widely known in Anatolian geography, especially in Manisa province, and is considered a functional food, consumed with pleasure. The paste is also included in the list of Turkiye's cultural heritage. The components of this paste include mustard seed (Sinapis arvensis), liquorice honey (Glycyrrhiza glabra) and grape seed (Vitis vinifera). These are among the measured contents of the paste, which contribute to its being an important source of health-promoting attributes with a different taste. Here, this chapter discusses the medicinal importance, chemical composition, traditional uses, pharmacological properties, possible dosage, toxicity information and possible drug interactions of mustard seed, liquorice honey and grape seed extracts contained in mesir macun and evaluates the potential of this paste as an important gastronomic product in terms of traditional medicine and nutrition. Mesir macun can be used as a functional food in many countries, especially on the Asian continent, in various areas such as chewing gum, confectionery, health products, herbal teas and natural drinks and can offer opportunities as a potential natural source for increasing the variety of functional foods. In addition, due to the bioactive components it contains, this paste can also offer alternative opportunities in the food sector by being added to various products in a reliable way. Therefore, we believe that Mesir macun deserves to be evaluated as a safe natural raw material that can be used as an alternative natural source in the food, cosmetic and pharmaceutical sectors.
